
All-purpose flour can be an option for some bread
For many wheat breads, all-purpose flour is a practical alternative when bread flour is unavailable. Expect possible changes in handling and crumb. The flour brand, recipe hydration, and bread style matter more than the name alone.
What a published loaf comparison actually showed
In King Arthur’s flour-swap comparison, the original Classic Sandwich Bread used all-purpose flour; the publisher repeated it with the same amount of its bread flour. Both loaves rose similarly. Bread flour gave a more upright shape and tighter crumb; the all-purpose loaf spread a little more at the top and was tender.
That trial runs from all-purpose to bread flour, rather than proving every reverse swap. It supports flexibility in a sandwich loaf while showing that equal flour quantity can still change texture. The quoted protein levels—11.7% for King Arthur all-purpose and 12.7% for its bread flour—are brand-specific.
Use the example without overextending it
The complete Classic Sandwich Bread recipe provides an all-purpose version with 360g flour. If you are adapting a bread-flour loaf, keep the original recipe alongside it and record the exact replacement weight. Do not substitute by a loosely filled cup while simultaneously changing the water.
After the recipe’s initial mixing or rest, compare the dough with its intended consistency. Kneading and resting can change the feel; immediately adding a large handful of flour can turn a manageable dough into a stiff one. Keep any bench flour measurable.
A bench-flour calculation
A simple dough with 500g flour and 325g water has 65% hydration. If another 50g flour is incorporated during kneading, the effective flour total becomes 550g: 325 ÷ 550 × 100 = 59.1%. That arithmetic example is not a recipe recommendation; it shows why unrecorded flour additions can obscure the effect of a flour swap.

For a very wet artisan dough, a heavily enriched loaf, or a style demanding particular strength, prefer a complete formula developed for your flour. An all-purpose sandwich-loaf success does not establish equivalent results in those breads.
