How to use the result

Ingredient weight ÷ total flour weight × 100. Add every flour together first, including flour in starter or preferments. Flour is always 100%; the formula total usually exceeds 100%.

Use the same weight unit for both entries. This calculation describes a formula; it does not recommend salt, yeast, or water levels. A 70% water figure is an example, not a universal target.
