
Similar everyday roles, not guaranteed identical products
UK plain flour and US all-purpose flour serve similar general baking roles. Doves Farm describes its plain white flour as an all-purpose baking flour; King Arthur lists all-purpose flour for a broad range of bakes. That does not establish identical protein or performance across brands.

Identify whether the flour is plain or self-raising, white or wholemeal, wheat or a gluten-free blend. A regional translation should not hide one of those larger differences. Strong bread flour is another category, not simply a different spelling of plain flour.
If available, compare the producer’s flour specification and the type used by the recipe author. Nutrition labels may round protein values, so tiny differences in a label calculation should not be treated as laboratory measurements.
Keep measuring conventions separate
A translated ingredient name does not also translate cup size or gram weight. Follow grams when the recipe provides them. If the recipe is volume-only, check its country and its own measurement guidance before applying a US conversion table.
Choose a useful first bake
Start with a recipe that permits a general-purpose flour and describes the expected dough or batter. For a demanding high-hydration loaf or delicate cake, use the specified category rather than relying on the word ‘plain.’
Record the brand and full product name beside your recipe. That gives you a repeatable reference if a later bag produces a noticeably different result.
A plain-flour recipe with separate baking powder
Suppose a UK recipe asks for 200 g plain flour plus 1 teaspoon baking powder. A US all-purpose wheat flour with no added raising agents serves the corresponding general-purpose role: measure the recipe’s 200 g and keep its separate baking powder. Choosing that regional name does not make the recipe self-rising, or authorize deleting its leavener. Brand differences can still affect the result.
