
Choose by the recipe, not sweetness alone
Corn syrup supplies more than a sweet taste. A syrup used in a pie filling is not automatically interchangeable with one used in candy, caramel, or a cooked icing. Compare a complete formula and method before replacing it.
A documented golden-syrup option
King Arthur’s Lyle’s Golden Syrup Pecan Pie explicitly lists ¾ cup (255g) golden syrup or ¾ cup (234g) light corn syrup in the same filling. That is a useful supported substitution within that recipe.
The volume is equal, but the listed weights differ by 21g. If using a scale, choose the weight for the syrup you are actually using; do not assume 255g of either product equals the recipe’s ¾ cup. The recipe scaler can scale the selected formula after the ingredient choice is settled.
A maple version is a complete alternative formula
King Arthur’s Maple Pecan Pie uses 1½ cups (468g) maple syrup and 4 eggs in its filling. It is a documented route to a maple-flavored pie without the corn-syrup ingredient, rather than proof that maple syrup replaces corn syrup at the same amount in any pecan pie.
Use that full recipe—including its other ingredients and bake method—rather than copying only its syrup quantity into a different pie. A liquid substitute can change both flavor and how the filling sets.
Light and dark corn syrup
Karo’s FAQ allows its light and dark products to substitute for each other in recipes, with a flavor and color change. That is a manufacturer-scoped product swap; it does not establish the same behavior for honey, maple syrup, homemade sugar syrup, or every invert syrup.
When the reason is allergy or avoiding corn
Confirm the exact alternative product’s ingredients and manufacturing information. A recipe without a corn-syrup ingredient is not automatically free of corn-derived ingredients or cross-contact. Successful setting is a baking result, not an allergen verification.
For candy or crystallization-sensitive preparations, select a complete recipe developed for the syrup available to you. The pecan-pie examples above establish useful options for those fillings, not a general candy conversion.
