Plain brownies and cheesecake brownies need different plans
Choose storage from the complete brownie, including its topping or filling. A moist chocolate crumb alone does not tell you whether the finished dessert can sit on the counter.
Two named examples

| Published recipe | Storage instruction | Freezing and thawing |
|---|---|---|
| King Arthur’s Big Batch Brownies, plain | Well wrapped at room temperature, 5–6 days | Freeze for longer storage; the recipe does not specify a freezer duration |
| Sally’s Raspberry Cheesecake Brownies | Covered in the refrigerator, up to 1 week | Freeze cut bars with parchment between layers in a freezer-safe container, up to 3 months; thaw overnight in the refrigerator |

Pack plain brownies without drying the edges
Allow plain brownies to cool before enclosing them, so the container does not trap a large amount of steam. Wrap or cover them well and avoid leaving cut surfaces exposed. Divide a large batch into portions you can open separately; repeatedly uncovering the whole batch makes the remaining edges harder to protect.
For a batch you will not use during its documented storage window, freeze suitable portions while still fresh and label the recipe and date. Freezing pauses storage; it does not repair unsafe handling before freezing.
A filling overrides the plain-brownie example
USDA specifically separates moist cheesecake and lemon bars from ordinary cookies. Treat a custard, cream cheese, or other perishable addition according to its own handling instructions, even when the base is a room-temperature brownie recipe.
Keep refrigerated desserts at 40°F or below. FDA exposure limits: 2 hours, or 1 hour above 90°F, including preparation and service.
When comparing recipes, prefer storage guidance for the whole finished bar. If a recipe author’s counter-storage suggestion conflicts with general perishable-food guidance, use the more protective refrigerated handling and flag the conflict rather than treating the longest published window as authoritative.
